COCONUT AND FRUIT PANCAKES RECIPE – Colorful and healthy choice for pancakes 🙂 An ideal choice for a vegetarian breakfast 🙂
Ingredients:
- 400 ml/14 oz coconut milk
- 3 eggs
- 3 tbsp powdered sugar
- 170 g/6 oz wheat flour
- 5 tbsp coconut flakes
- 1 tbsp melted butter
- pinch of salt
- oil
Stuffing:
- 2 bananas
- 1 kiwi
- 6 strawberries
- 4 halves of peaches from syrup
- lemon juice squeezed from 1 lemon
- 1 tbsp vanilla sugar
- 1 small package of vanilla cream cheese
- 20 g/1 oz milk chocolate
Method:
- Sift the flour with salt and powdered sugar into a bowl. Add milk, eggs and coconut flakes, then mix everything well. When the ingredients merge nicely pour melted butter in as well.
- Cover the bowl containing batter with food foil and set it aside for 15 minutes.
- Fry the pancakes on a pan with a little bit of heated oil. Pour some batter on the surface and flip it once air bubbles start to foam and the pancake get a little brown, repeat for the other side.
- Peel the bananas and slice them, then drip lemon juice over the slices. Drain the peaches and wash strawberries, peel the kiwi. Slice all the fruits.
- Put a mix of fruits on top of a pancake and sprinkle some vanilla sugar on top. Fold each pancake in half twice, to form a triangle.
- Serve with vanilla cream cheese on the side and with melted chocolate poured over.
