CRUSTY STRAWBERRY CAKE RECIPE
Ingredients:
- 310 g/2½ cup wheat flour
- 250 g/8¾ oz butter
- 5 egg yolks
- 4 tbsp powdered sugar
- 2 tsp baking powder
Strawberry filling:
- 5 egg whites
- 200 g/1 cup sugar
- 2 x 40 g/1½ oz instant raspberry pudding
- 125 ml/½ cup oil
- pinch of salt
- 500 g/17½ oz strawberries
Method:
- Make sure all ingredients are in room temperature. Preheat the oven to 190°C/380°C.
- Put the flour in a mixing bowl, add powdered sugar, butter slices into smaller pieces, egg yolks and knead it into smooth dough. Split the dough into two (60%/40%). Wrap the smaller piece in food foil and put away into the freezer.
- Grease and line a 22×33 cm/9×13 in baking pan with parchment. Fill it with the remaining part of the dough, evenly covering the surface. Bake for 20 minutes, then leave for it to cool down completely.
- Pour the egg whites into a mixing bowl, add pinch of salt and beat it until it starts foaming. Put the sugar in and keep mixing on high speed until it gets thick. Then, lower the speed and add oil along with instant pudding. Mix until everything merges.
- Pour the filling on the cooled base, then stick strawberries inside of it. Take the other part of the dough from the freezer and grate it over the cake.
- Bake for 40 minutes. Put the baked cake aside for to cool down completely.
