STRAWBERRY CLOUD – NO-BAKE CAKE RECIPE
Ingredients:
- 2 x 75 g/2½ oz packets of jelly
- 500 g/17½ strawberries, blended
- 400 ml/13½ fl oz hot water
- 500 ml/17 fl oz whipped cream
- around 16 tea biscuits
- around 16 sponge fingers
Method:
- Mix the jelly in hot water so that no crystals are visible and set aside to cool down
- Take a large bowl and pour blended strawberries inside. Add the cooled down jelly and whisk well.
- Put the newly created mixture with whipped cream and mix again
- Line a 20×30 cm/8×12 in baking pan with parchment paper. Put a layer of sponge fingers to cover the bottom. Pour the mixture over it, then cover with a layer of tea biscuits.
- Place the cake in the fridge for few hours before serving.
