VIENNESE CHEESECAKE RECIPE – This version of cheesecake is probably the most popular one in Poland. It’s a baked cake with no base, it’s soft and refined. Normally you can add extra ingredients to it like raisins or orange skin but I prefer it in its purest form. Tasty, tested recipe 🙂
VIENNESE CHEESECAKE RECIPE
Ingredients:
- 1 kg/35 oz curd cheese minced thrice
- 6 eggs
- 200 g/1 cup sugar
- 125 g/4½ oz butter, plus extra for greasing
- 1 tbsp potato starch
- 2 tbsp wheat flour
- 2 tsp vanilla sugar or extract
- bread crumbs, for lining
- powdered sugar, for dusting
Method:
- Grease a 25 cm/10 in springform cake pan with butter and line it with thin layer of bread crumbs. Preheat the oven to 180°C/360°F
- Separate the yolks from the whites. In a large bowl mix together egg yolks, both sugar and vanilla sugar, then butter.
- Next, add the soft cheese gradually while constantly mixing, then add the flour into the bowl and mix well again.
- In a separate bowl whisk the egg whites with a pinch of salt well, then add it to the rest. Stir well with a spatula. Pour everything into the pan and spread evenly
- Bake for around an hour. When it’s done leave the over door open slightly for it cool down, cover it with a thin layer of icing sugar before serving
