HOMEMADE LARD RECIPE – rendered pork fat, known in Poland as “smalec”, is a popular base for many Polish dishes, as well as a good substitute fat for frying and deep frying overall. It’s a must have in my kitchen at all times ?



  • 1 kg/2¼ lbs pork fat
  • 1 tsp salt
  • 3 medium onions


  1. Finely dice the fat, move it to a pot over small heat. Once the fat start to melt, add salt to it.
  2. Peel the onions and cut them in fours. Add them into the pot once the fat is almost all melted. Keep cooking for 30 minutes, after which pick the onions out or run everything through a strainer into a heat-resistant container.
  3. Pour the lard into jars or similar containers, then wait for it to cool down before putting it in the fridge. Lard prepared like that can be stored for weeks or even months.
