STUFFED BELL PEPPER RECIPE – Simple yet impressive meal with meat-based stuffing inside ?
STUFFED BELL PEPPER RECIPE
Ingredients:
- 3 large red bell peppers
- 1 onion
- 1 bag of rice
- 300 g/10 oz ground meat
- 100 – 150 g/3½ – 5 oz gouda or similar cheese
- 2 tbsp butter (or other fat), plus extra for greasing
- black pepper
- salt
- marjoram
- bunch of parsley
Method:
- Wash, dry and cut away the caps of peppers, then remove all seeds from inside. Finely chop parsley and grate the cheese. Cook rice al dente.
- Peel and dice the onion. Cook it over medium heat on butter until it’s translucent. Add ground meat and let it simmer for few more minutes.
- Pour cooked rice into a bowl, add onion with meat from the pan, along with salt & pepper, marjoram, chopped parsley and grated cheese. Mix everything well.
- Fill each bell pepper with the stuffing and cover them back with caps you removed earlier. Place them in a baking dish greased with butter (just the bottom).
- Cook under cover for 30 minutes in an oven preheated to 200°C/390°F. After that time remove the lid from the dish and bake for 10 more minutes.
