CHICKEN AND ZUCCHINI PASTA RECIPE – When it’s hot, it’s better to spend as little time at cooking as possible. That’s when such quick recipes like this really shines 🙂



  • 2 skinless chicken breasts (around 450 g/15¾ oz)
  • 2 young zucchinis (here one green one yellow)
  • 3 tomatoes
  • 2-3 cloves of garlic
  • 3 tbsp fresh parsley, chopped
  • 1 tbsp fresh basil, chopped
  • 250 g/8¾ oz penne pasta
  • 2 tbsp oil
  • approx. 2 tbsp water
  • salt
  • black pepper
  • ½ tsp hot paprika
  • ½ tsp sweet paprika


  1. Wash, dry and slice the meat into small pieces. Wash the vegetables, cut zucchinis into half-slices. Steam the tomatoes and take the peel off, then dice the pulp. Boil and drain pasta.
  2. Heat up the oil on a pan over medium heat. Put the chicken on the pan, season with salt, pepper, hot and sweet paprika, then cook for 8-10 minutes, stirring occasionally.
  3. Add garlic, cook for another 30 seconds, then add zucchini and water. Give everything a good stir and, after another minute, throw in the tomatoes.
  4. Season everything with salt and pepper again, then simmer until the tomatoes fall apart, zucchini softens and the sauce evaporate a little.
  5. Add cooked pasta, chopped parsley and basil, then mix well. Take the pan off the heat. Ready for serving!
