CHICKEN AND ZUCCHINI PASTA RECIPE – When it’s hot, it’s better to spend as little time at cooking as possible. That’s when such quick recipes like this really shines 🙂
CHICKEN AND ZUCCHINI PASTA RECIPE
Ingredients:
- 2 skinless chicken breasts (around 450 g/15¾ oz)
- 2 young zucchinis (here one green one yellow)
- 3 tomatoes
- 2-3 cloves of garlic
- 3 tbsp fresh parsley, chopped
- 1 tbsp fresh basil, chopped
- 250 g/8¾ oz penne pasta
- 2 tbsp oil
- approx. 2 tbsp water
- salt
- black pepper
- ½ tsp hot paprika
- ½ tsp sweet paprika
Method:
- Wash, dry and slice the meat into small pieces. Wash the vegetables, cut zucchinis into half-slices. Steam the tomatoes and take the peel off, then dice the pulp. Boil and drain pasta.
- Heat up the oil on a pan over medium heat. Put the chicken on the pan, season with salt, pepper, hot and sweet paprika, then cook for 8-10 minutes, stirring occasionally.
- Add garlic, cook for another 30 seconds, then add zucchini and water. Give everything a good stir and, after another minute, throw in the tomatoes.
- Season everything with salt and pepper again, then simmer until the tomatoes fall apart, zucchini softens and the sauce evaporate a little.
- Add cooked pasta, chopped parsley and basil, then mix well. Take the pan off the heat. Ready for serving!
