ZUCCHINI FRITTERS WITH YOGHURT RECIPE – Best fritters from zucchini you can make. Easy, fast and tasty. Try them yourself and you won’t regret it 🙂

ZUCCHINI FRITTERS WITH YOGHURT RECIPE


Ingredients:

  • 1 medium zucchini
  • 2 eggs
  • 2 tbsp natural yoghurt
  • 6 tbsp wheat flour
  • bunch of dill, chopped
  • 1 small onion
  • salt
  • black pepper
  • oil
  • cream, for serving


Method:

  1. Wash and grate the zucchini roughly. Salt it and set aside for 10-15 minutes for zucchini to release the juices. After that time squeeze the juice out with a strainer.
  2. Peel and dice the onion finely, then add it to zucchini along with eggs, yoghurt and half of the chopped dill. Season with salt and pepper, then add flour and mix well (if the batter is not thick enough add 1-2 tbsp flour more).
  3. Heat up some oil on a pan over medium heat. Take a portion of the mixture and cook on both sides until it turns brown. Serve the fritters with cream and the rest of dill on top.
