CARROT SOUP – LIGHT MEAL RECIPE – Delicate, light soup, sweet from the carrot, perfect for kids or an easy to digest meal 🙂

CARROT SOUP – LIGHT MEAL RECIPE


Ingredients:

  • 6 big carrots
  • 1 large potato
  • around 4 cm/2 in of leek (white part)
  • ⅓ parsley root
  • ⅕ celery root
  • 1 tbsp butter
  • 1½ l/50¾ fl oz hot water
  • 1 tsp dried parsley
  • salt
  • black pepper
  • 100 g/3½ oz rice


Method:

  1. Wash and peel all vegetables. Cut the carrots, leek and parsley root into slices. Dice the potato and celery root roughly.
  2. Melt the butter in a pot over medium heat. Put all the cut vegetables inside and cook them for around 5 minutes while stirring. Pour the hot water inside (the vegetables have to be submerged) and cook over medium heat. Season with dried parsley and a pinch of salt in the meantime.
  3. Cook the soup until the vegetables turn completely soft, at which point take it off the heat and blend the pot content well. Season with salt and pepper for taste. Serve with cooked rice.
