LEMON ZUCCHINI CAKE RECIPE – It’s a delicious cake, loved by my whole family 🙂 Definitely worth trying, really easy to prepare and you don’t even need a mixer to make one 🙂
LEMON ZUCCHINI CAKE RECIPE
Ingredients:
- 375 g/3 cups flour
- 3 eggs
- 200 g/1 cup sugar
- 250 ml/1 cup oil, plus extra for greasing
- grated lemon skin from 1 lemon
- 2 cups roughly grated zucchini
- 1 tsp baking soda
- 1 tsp baking powder
- powdered sugar, for dusting
Method:
- Preheat the oven to 180°C/360°F. Make sure all ingredients are in room temperature.
- Take a large bowl and mix together all the dry ingredients inside: flour, soda, baking powder and sugar. Into another bowl put the eggs, oil, zucchini and lemon skin, then stir well. Pour the liquid mix to the dry one and mix everything with a spoon.
- Grease and line a 20×30 cm/8×12 in baking pan with parchment paper, then fill and spread the batter inside. Bake for around 45 minutes (the cake is ready when you stick a skewer in the center and it comes out dry). Cool on a wire rack and dust with powdered sugar before serving.
