VEGETABLES PANCAKE ROLL – HOMEMADE RECIPE
Ingredients:
- 125 g/1 cup flour
- 125 ml/½ cup water
- 60 ml/¼ cup milk
- 2 eggs
- pinch of salt
Stuffing:
- 2 carrots
- 1 parsley root
- ¼ celery root
- 1 onion
- 1 leek, white part
- ½ x 400 g/14 oz canned peas
- 2 cloves of garlic, pressed
- ½ bunch of chive, chopped
- 3 tbsp butter
- 100 g/3½ oz cheese, grated
Method:
- Take a large bowl and put flour inside. Add water, milk, eggs and pinch of salt, then beat it into a smooth dough. Put it aside for 30 minutes to rest. After that time fry pancakes on hot pan.
- Wash all vegetables. Peel the carrots, parsley and celery root, then grate them finely. Dice the onion and slice the leek.
- Warm up the butter on a pan over medium heat. Cook the vegetables under a lid, until they go soft. Turn off the heat, add drained peas, pressed garlic, chive and cheese. Season with salt and pepper for taste and mix everything well.
- Lay down the pancakes in rows of two, so that they overlap. Pour the stuffing in the middle, keeping the edges empty. Flip the shorter edges inside and roll from the longer side. Wrap the roll in plastic food wrap and leave in the fridge for an hour before serving.
