TRADITIONAL ROASTED HAM – BEST RECIPE


Ingredients:

  • 4,5 kg/10 lbs ham, with bones and skin
  • 1 leek
  • 1 onion
  • ¼ celery root
  • 1 parsley root
  • 1 big carrot
  • 3 allspice berries
  • ½ tsp powdered nutmeg
  • 1 tbsp marjoram
  • 1 tsp black pepper seeds
  • 2-3 tbsp whole-grain mustard
  • 4 tbsp honey
  • 2-3 tbsp horseradish
  • 3 tbsp limoncello or vodka
  • salt
  • black pepper


Method:

  1. Season the ham with salt and pepper heavily from both sides and rub the marjoram around and inside it if possible
  2. Slice the carrot, roughly cut the leek and parsley root and cut the onion into quarters
  3. Take a pot big enough so that the ham does not stick out when put inside. Add all the previously cut vegetables, including celery root, as well as allspice, pepper seeds and nutmeg
  4. Pour the water into the pot until everything is submerged. Boil on medium heat for 4.5 hours (1 hour per 1kg/2.2 lbs of ham).
  5. While the ham is boiling prepare the glaze: In a bowl put together mustard, horseradish, honey and alcohol. Mix everything well.
  6. After boiling, take the ham out and let it cool down. Preheat the oven to 160°C/320°F
  7. When the meat is ready, cross-cut the skin and fat all around it. Use around ⅓ of the glaze and cover the ham with it.
  8. Bake for 30 minutes. After that time take the ham out and glaze it again using half of what is left and put back into oven for an hour.
  9. After second baking glaze the ham for the last time with all you have left. Increase the temperature to 200-220°C/390-430°F and bake for around 30 minutes or until the skin becomes crusty
