MEAT BROTH – HOMEMADE RECIPE – Probably the most common among soups in Polish cuisine, known as “Rosół”. Usually made with several types of meat, it’s a great choice for any Sunday afternoon meal.
MEAT BROTH – HOMEMADE RECIPE
Ingredients:
- 2 l/ 0,5 gal water
- 600 g/ 20 oz beef shin
- 1 onion
- ½ chicken
- 2 tsp salt
- 2 carrots
- ¼ celery root
- Piece of leek
- 1 parsley root
- ½ parsley bunch, plus extra for serving
- 1 bay leaf
- 2 allspice berries
Method:
- Pour the water into a pot, then add washed meat and salt
- Peel all vegetables, cut the carrots and leek in half and the parsley root into four pieces. Put it all in the pot along
- with parsley bunch, bay leaf and allspice. Cook everything on small fire for about an hour
- Fire an onion by holding it above the gas stove until black marks start appearing on each side or frying it on a pan from each side. Add the onion to the soup and cook for another hour
- Broth can be drained before serving to avoid unwanted elements on a plate. Serve sprinkled with parsley
