CLASSIC PEAS AND CARROTS RECIPE
Ingredients:
- 1 kg/34 oz carrots
- 2 tbsp butter
- 1 tbsp lemon juice
- 2 tbsp thick cream
- 2 cups green peas
- salt
- black pepper
Method:
- Peel and cut the carrot into small pieces. Put them in a pot, submerge in water, then add 2 tsp of salt and bring it to boil. When the carrot is already soft drain the water (but keep them in the pot)
- Cook the peas in slightly salted water, then wash them down with cold water in a strainer (to preserve their color)
- Add butter to carrot, followed up with lemon juice. Season with salt for taste if needed, then mash them into puree. Cook it under medium-low fire for few minutes, stirring from time to time, then add peas, cream, pepper and mix well. Serve it as a warm side to your meal.
