CLASSIC PEAS AND CARROTS RECIPE – Delicious carrots with wonderful green peas. A well known and loved side in Eastern Europe and around the world 🙂

CLASSIC PEAS AND CARROTS RECIPE


Ingredients:

  • 1 kg/34 oz carrots
  • 2 tbsp butter
  • 1 tbsp lemon juice
  • 2 tbsp thick cream
  • 2 cups green peas
  • salt
  • black pepper


Method:

  1. Peel and cut the carrot into small pieces. Put them in a pot, submerge in water, then add 2 tsp of salt and bring it to boil. When the carrot is already soft drain the water (but keep them in the pot)
  2. Cook the peas in slightly salted water, then wash them down with cold water in a strainer (to preserve their color)
  3. Add butter to carrot, followed up with lemon juice. Season with salt for taste if needed, then mash them into puree. Cook it under medium-low fire for few minutes, stirring from time to time, then add peas, cream, pepper and mix well. Serve it as a warm side to your meal.
