CUCUMBER COLD SERVED SOUP RECIPE
Ingredients:
- 500 g/17½ oz ground cucumbers
- ½ bunch of dill
- ⅓ bunch of chive with onions
- 2 cloves of garlic
- 400 ml/14 oz greek or natural yoghurt
- 200 ml/7 oz creamy, natural yoghurt
- salt
- black pepper
- hard boiled eggs
Method:
- Wash, peel and grate the cucumbers well. Chop dill and chive finely and add them to cucumbers, along with pressed garlic. Season everything with salt and pepper for taste.
- Mix together both yoghurts, then pour it into the rest of ingredients. Season with more salt and pepper if needed.
- Set aside for 20 minutes for the flavors to merge. Before serving, mix the soup well. Serve with hard boiled eggs or potatoes.
