EASIEST GOOSEBERRY CAKE RECIPE – While a bit uncommon, gooseberries can also serve to make some delicious pastries with them, being a fair match to some more popular choices 🙂
EASIEST GOOSEBERRY CAKE RECIPE
Ingredients:
- 200 g/7 oz margarine
- 190 g/1½ cup wheat flour
- 2 tsp baking powder
- 375 g/1¾ cup sugar
- 5 eggs
- 2 tbsp cocoa
- 2 cups gooseberries
Cream:
- 500 ml/17 fl oz whipping cream
- 250 g/8¾ oz mascarpone cheese
- 2 tbsp powdered sugar
Additionally:
- powdered or grated chocolate, for dusting.
Method:
- Preheat the oven to 180°C/360°F.
- Start kneading margarine with sugar, adding eggs one at a time, then add flour along with baking powder. Once everything merges well, put half of the batter into a greased, 22×32 cm/9×12 in baking pan lined with parchment paper. Add cocoa to the remaining half, then pour it into the pan as well.
- Bake the base for 13-15 minutes, after which stick gooseberries into the cake and bake for another 30 minutes.
In the meantime prepare the cream layer. Put the cream into a mixing bowl and start beating it, adding powdered sugar and mascarpone in the process.
- Keep mixing until you get a smooth cream.
- Once the base is baked and cools down a little, spread the creamy layer on top of it. Dust the whole cake with chocolate and leave in the fridge for some time for the cream to set a little. Enjoy 🙂
