GRILLED EGGPLANT SALAD RECIPE – This salad looks great and will enrich any dinner table, or it can also serve as a whole separate meal. Prepare it easily at home or a barbecue party 🙂



  • 1 eggplant
  • liquid seasoning
  • few leafs of favorite lettuce
  • 2 small tomatoes
  • 100 g/3½ oz feta cheese
  • ½ pomegranate
  • olive oil
  • salt
  • black pepper


  1. Wash and dry the lettuce leafs. Pick the seeds out of pomegranate. Dice the feta cheese. Cut tomatoes into smaller pieces.
  2. Wash, dry and roughly slice the eggplant. Season the slices with salt and set them aside for around 10 minutes. After that time wash and dry the eggplant again, put it in a bowl then sprinkle some liquid seasoning over the slices. Cover the bowl with food wrap or cloth and set it aside for another 15 minutes.
  3. Grill the eggplant slices on both sides until they brown.
  4. Take a large platter or plate. Lay down lettuce leafs on the bottom, next put eggplant slices on top of the leaves, then tomato pieces. Sprinkle it over with feta cheese and pomegranate seeds, pour olive oil on top, then finish with salt and pepper for taste.
