NO-BAKE RHUBARB CAKE RECIPE – A delicious, delicate and elegant looking cake. It’s a worthy choice for any special occasion 🙂

NO-BAKE RHUBARB CAKE RECIPE


Ingredients:

  • 500 g/17½ oz rhubarb
  • 1 can condensed milk (reduced-sugar)
  • 2 x 75g/2 oz lemon jelly package
  • 4 tbsp sugar
  • 20 g/1 oz sponge cake
  • 100 g/3½ oz butter, softened
  • 500 ml/17 fl oz whipping cream
  • 3 tbsp powdered sugar
  • ½ dark chocolate bar, grated


Method:

  1. Crumble the sponge cake into a bowl, add butter and mix well. Line a 24 cm/10 in springform pan with parchment paper, then fill the bottom of it with created butter crumbs, firmly pressing it down. Put the pan aside into the fridge.
  2. Peel and wash the rhubarb, then cut it into small pieces. Put them in a pot and cook it with 4 tbsp of sugar. When the rhubarb softens and releases juices take it off the heat. Pour the jelly inside, stir throughly and set the pot aside to cool down a little.
  3. Take a large mixing bowl, pour condensed milk inside and beat it. To the whipped milk add cooled down rhubarb mousse. Mix well on medium speed. Pour created mixture over the base in the pan and put it back in the fridge to set.
  4. Pour the cream into the mixing bowl, add powdered sugar and beat well. When the cake sets, spread the cream over it. Sprinkle the top with chocolate and put away for 2 more hours in the fridge, then the cake is ready.
