IRON POT BREAD – EASY RECIPE
Ingredients:
- 500 g/17½ oz wheat flour, plus extra for dusting
- 20 g/¾ oz fresh yeast
- 1 tsp sugar
- 1½ tsp salt
- 400 ml/13½ fl oz warm water
Method:
- Crumble the yeast into a bowl, add sugar and mash until it becomes liquid. Pour around 100 ml/3½ fl oz warm water, stir well and set aside for around 15 minutes in warm place for yeast to start working
- Take a large mixing bowl and put inside flour. Add salt, yeast solution and remaining water, then mix well with a spoon. Cover the bowl with cloth or food wrap and put away in the fridge for at least 10 hours (make sure the bowl is big enough, the dough will double its volume).
- After that time, take the dough out of the fridge and move it on a flat surface dusted with flour. Knead, forming a standard loaf shape with it. Cover with cloth and leave for around 30 minutes in warm place to grow.
- Preheat the oven to 230°C/440°F and put an iron pot inside (You can also use baking dish with a lid). When it gets hot, take the pot out and lower the temperature to 200°C/390°F. Move the loaf into the pot, put the lid on and bake for 30 minutes, then another 25 without the lid on. Cool on a wire rack.
