HOMEMADE SAVORY TART RECIPE – If you like asparagus you need to try this non sweet tart at least once 🙂

  • 250 g/2 cups flour
  • 100 g/3½ oz butter or margarine, plus extra for greasing
  • 2 egg yolks
  • ½ tsp salt
  • bread crumbs, for lining
  • 100 g/3½ oz blue cheese
  • 6 slices dry smoked sausage, diced
  • 4 medium mushrooms, sliced
  • 500 g/17½ oz asparagus
  • 1 tsp sugar
  • 50 ml/¼ cup milk
  • 100 g/3½ oz grated gouda
  • few rosaries of broccoli
  • 2 eggs
  • 250 ml/1 cup sour cream
  • marjoram
  • salt
  • black pepper
  • powdered or grated nutmeg
  • cherry tomatoes

  1. Preheat the oven to 180°C/360°F.
  2. Prepare the pastry first: In a large bowl put flour, butter, salt and egg yolks, then knead into a smooth dough. Wrap it in plastic food foil and put aside in the fridge for 30 minutes.
  3. Grease and line a 28 cm/11 in tart pan with bread crumbs. When pastry is ready, roll it so that it fills the surface of the pan, covering the sides as well. Bake for around 15 minutes.
  4. Heat up water in a large pot and peel the asparagus. When the water is boiling, add sugar and milk, then put in asparagus. Cook for 5 minutes, take them out and roughly cut when they cool down.
  5. When the pastry is ready lay down the sausage, mushroom slices and smaller pieces of asparagus (leave the bigger ones for later).
  6. Take a bowl and put cream inside, then add grated gouda and eggs. Season with salt, pepper, marjoram and nutmeg for taste and beat well. Pour the mixture over the tart.
  7. Place broccoli rosaries, remaining asparagus and cherry tomatoes cut in quarters and crumble the blue cheese over your tart. Bake for another 25 minutes (same temperature).
