BAKED VEGETABLES PASTA – EASY RECIPE
Ingredients:
- 2 medium zucchinis
- 1 red pepper
- 2 cloves of garlic
- 3 tbsp olive oil
- 300 g/10½ oz pasta
- 200 ml/6¾ fl oz light cream
- 2 tsp whole-grain mustard
- 100 g/3½ grated cheese
- salt
- black pepper
- basil
Method:
- Preheat the oven to 220°C/430°F.
- Wash and dry zucchinis and red pepper. Remove the seeds from pepper then julienne it, along with zucchinis. Peel and finely chop garlic.
- Put cut zucchini and pepper on a baking tray, spread the chopped garlic and pour olive oil over them. Season with salt, black pepper and basil for taste and toss the vegetables until everything is covered in olive oil. Bake for around 20 minutes.
- Take a medium bowl and whisk together cream with mustard inside.
- Cook the pasta al dente in large amount of salted water. Drain it, then mix with baked vegetables, cream and mustard sauce and topped with grated cheese. Can be served right away.
