ZUCCHINI SOUP – BEST RECIPE
Ingredients:
- 1 leek
- 2 zucchinis
- around 600 ml/20 oz vegetable or meat stock
- 2 cloves of garlic, pressed
- 125 ml/½ cup whipping cream
- ½ bunch of dill, chopped
- 150 g/5⅓ oz feta cheese, for serving
- 1 tbsp butter
- 2 tbsp oil
- salt
- black pepper
Method:
- Heat up the oil with butter in a large pot. Chop the leek into half slices. Add it to the pot when the oil is hot, season with salt and cook it
- Cut the zucchinis into quarters and slice them, then place into the pot. Add the garlic and cook everything while constantly stirring
- When the vegetables are done pour over the stock then cook under a lid for around 25 minutes
- After the time, blend the vegetables well. Season the soup with salt and pepper for taste and add the chopped dill.
- Pour in the cream and mix well
- Serve the soup with some feta cheese and sprinkled with freshly chopped dill
