PEANUT BUTTER AND BLUEBERRY CUP RECIPE
Ingredients (for 4 servings):
- 45 g/1½ oz expanded wheat
- 4 tbsp peanut butter
- 2 tbsp honey
- 300 g/10½ oz skyr yoghurt (iceland yoghurt)
- 250 g/9 oz blueberries
Method:
- Wash and dry blueberries. Keep the yoghurt cold until the moment you use it.
- Mix together wheat, 1 tbsp honey and peanut butter. In a separate bowl whisk yoghurt with the other honey spoon.
- Take 4 dessert cups. On the bottom of each put a layer of peanut butter wheat, then a layer of yoghurt with honey and on top of that, sprinkle a bunch of blueberries. Serve right away.
