CUCUMBER COLD SERVED SOUP RECIPE – Ideal lunch for a hot day. Tasty, light and quick in preparation 🙂

CUCUMBER COLD SERVED SOUP RECIPE


Ingredients:

  • 500 g/17½ oz ground cucumbers
  • ½ bunch of dill
  • ⅓ bunch of chive with onions
  • 2 cloves of garlic
  • 400 ml/14 oz greek or natural yoghurt
  • 200 ml/7 oz creamy, natural yoghurt
  • salt
  • black pepper
  • hard boiled eggs


Method:

  1. Wash, peel and grate the cucumbers well. Chop dill and chive finely and add them to cucumbers, along with pressed garlic. Season everything with salt and pepper for taste.
  2. Mix together both yoghurts, then pour it into the rest of ingredients. Season with more salt and pepper if needed.
  3. Set aside for 20 minutes for the flavors to merge. Before serving, mix the soup well. Serve with hard boiled eggs or potatoes.
