PEACH DELIGHT NO-BAKE CAKE RECIPE – Soft and delicious cake that doesn’t require baking 🙂

PEACH DELIGHT NO-BAKE CAKE RECIPE


Ingredients:

  • 500 ml/17 oz milk
  • 2 egg yolks
  • 3 tbsp wheat flour
  • 3 tbsp potato flour
  • 100 g/3½ oz butter, room temperature
  • 5 tbsp sugar
  • 48 plain tea biscuits
  • large can of peaches
  • 1 x 75 g/2¼ oz peach jelly


Method:

  1. Pour half of the milk into a pot, add sugar and boil it. Mix the remaining milk with egg yolks and both flours, then add it to the boiling milk. Cook while stirring constantly, until you get consistency of a pudding. Cool the created pudding on the side.
  2. Whisk the butter until it gets puffy, then gradually add cooled pudding, mixing all the time.
  3. In a separate bowl, dissolve the jelly in 500 ml/17 oz hot water. Drain the peaches from syrup and cut them into thin slices.
  4. Line a 33×22 cm/13×9 in baking pan with parchment paper. Form a layer of biscuits on the bottom of the pan (should take ⅓ off all). Pour ⅓ of the custard over them, then repeat twice more: biscuits, custard, biscuits, custard, each time using ⅓ off the whole each time. On top of all that lay down peach slices and then pour the setting jello over everything.
  5. Set the cake aside into the fridge for few hours to completely set before serving.
