HALLOUMI CHEESE SALAD RECIPE – Perfect summer salad, works great as a healthy snack or a barbecue party side 🙂
HALLOUMI CHEESE SALAD RECIPE
Ingredients:
- 225 g/8 oz halloumi cheese
- 50 g/1¾ oz rocket
- 6-8 apricots
- 4-6 cherry tomatoes
- fistful of cashew
- 5-6 fresh mint leaves
Dressing:
- 2 tbsp lemon juice
- 1 tbsp honey
- 4 tbsp olive oil
- black pepper
Method:
- Slice the cheese into around 1 cm/½ in thick each. Wash apricots, remove seeds and cut them into quarters.
- Heat up a pan and grill the cheese for 3-4 minutes on each side. Then, fry both fruits and cashews, until both turn a little brown and apricots go soft.
- On a plate, lay down some rocket, cherry tomatoes’ halves, then cheese and apricots. Finish the salad off with fried cashews and chopped mint leaves.
- Mix together lemon juice, honey, olive oil and ground pepper separately. Then, pour the dressing over the salad and serve immediately.
