HALLOUMI CHEESE SALAD RECIPE – Perfect summer salad, works great as a healthy snack or a barbecue party side 🙂

HALLOUMI CHEESE SALAD RECIPE


Ingredients:

  • 225 g/8 oz halloumi cheese
  • 50 g/1¾ oz rocket
  • 6-8 apricots
  • 4-6 cherry tomatoes
  • fistful of cashew
  • 5-6 fresh mint leaves
Dressing:
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 4 tbsp olive oil
  • black pepper


Method:

  1. Slice the cheese into around 1 cm/½ in thick each. Wash apricots, remove seeds and cut them into quarters.
  2. Heat up a pan and grill the cheese for 3-4 minutes on each side. Then, fry both fruits and cashews, until both turn a little brown and apricots go soft.
  3. On a plate, lay down some rocket, cherry tomatoes’ halves, then cheese and apricots. Finish the salad off with fried cashews and chopped mint leaves.
  4. Mix together lemon juice, honey, olive oil and ground pepper separately. Then, pour the dressing over the salad and serve immediately.
