CHŁODNIK – COLD SERVED POLISH BEET SOUP RECIPE – The heat of cooking and food on a hot day can sometimes be overwhelming. That’s why it’s nice to prepare something to cool yourself off from time to time, like this fine traditional Polish cold soup 🙂
CHŁODNIK – COLD SERVED POLISH BEET SOUP RECIPE
Ingredients:
- 1 l/34 oz buttermilk
- 400 ml/14 oz soured milk
- boiled eggs
- 4 boiled beetroots
- pinch of sugar
- juice from ½ lemon
- 2-3 cloves of garlic
- 1 bunch of chive
- 1 bunch of dill
- salt
- black pepper
Method:
- Peel, boil and cool the beets. The best time to prepare them is the previous day’s evening, to avoid heating up the kitchen in the middle of the day :). Same works for boiling eggs.
- Into a large bowl pour buttermilk. Add soured milk and whisk well. Grate the beets, then finely chop dill and chive.
- Put grated beets into the dairy mix and stir well. Season with salt, about 1-2 tsp, and freshly ground pepper. Add a pinch of sugar and pressed garlic cloves.
- Add lemon juice, chopped dill and chive, mixing the soup well after every ingredient. Pour the soup into a bowl and add a boiled egg inside to enhance the flavor.
