SIMPLE BROCCOLI SALAD RECIPE – a fast to prepare, simple and healthy recipe for a salad that makes a great side not only to your dinner, but also breakfast or supper 🙂

SIMPLE BROCCOLI SALAD RECIPE


Ingredients:

  • 1 broccoli head
  • 1 red pepper
  • small can of sweetcorn
  • ½ bunch of dill
Dressing:
  • 3-4 tbsp oil or olive oil
  • 1 tbsp lemon juice
  • 2 cloves of garlic
  • salt
  • black pepper


Method:

  1. Split the broccoli into florets, then chop them finely. Move the broccoli into a bowl, season with salt and mash it. Set it aside for 15 minutes to soften.
  2. Remove the core from pepper, then dice it finely. Drain the corn and finely chop the dill. Add those ingredients to broccoli once it softens.
  3. Prepare the dressing in a separate bowl: Pour oil and lemon juice in, add pressed garlic, salt and pepper, then mix everything well. Pour the dressing over the salad and toss it well. Set aside for around an hour before serving, for the flavors to merge.
