QUICK VEGETABLE TORTILLAS RECIPE
Ingredients:
Stuffing:
- ½ red pepper
- ½ yellow pepper
- 1 carrot
- 50-60 g/1¾-2 oz salad mix
- 1 small red onion
- 1 tbsp sesame
Mint dip:
- 200 g/7 oz thick, natural yoghurt
- bunch of fresh mint
- 1 tsp lemon juice
- salt
- black pepper
Method:
- Wash all vegetables well. Peel and julienne carrot and onion, then slice the peppers.
- Lay down a small fistful of salad mix on a tortilla, add pepper, onion and carrot, then sprinkle some sesame on top and roll the tortilla. Cut it into two or three pieces. Repeat for the remaining tortillas.
- Prepare the dip in a small bowl. Pour the yoghurt in, add finely chopped mint and lemon juice, season with salt and pepper for taste, then mix well. Serve tortillas with the dip on a plate for easy access.
