BEET CUTLETS RECIPE – delightful, cheap and easy cutlets made with beet greens and other vegetables that will make for a fine and healthy dinner 🙂



  • 2 large beets (along with greens/leafs)
  • several boiled potatoes (could be leftovers from the previous day)
  • 1 small or ½ large apple
  • 3-4 tbsp potato starch
  • 2 tbsp wheat flour
  • 135 g/4½ oz feta cheese
  • 1 onion
  • 2 carrots
  • ½ bunch of dill
  • few drops of lemon juice
  • bread crumbs
  • salt
  • black pepper


  1. Wash all vegetables throughly. Cut the greens from the beetroots, then grate the roots, along with peeled apple and carrots. Chop the beet greens finely. Peel and dice the onion.
  2. Braise all prepared vegetables until they soften. Move them to a large bowl, add lemon juice and potatoes then mix. Put both potato starch and wheat flour in, as well as chopped dill and feta cheese. Season with salt and pepper for taste and knead until everything merges.
  3. Form cutlets from created mass (keep your hands wet with water to prevent sticking). Cover them in bread crumbs on all sides.
  4. Fry the cutlets over heated oil from both sides, or in an oven, until they turn golden. Serve with yoghurt, buttercream or a salad on the side.
