BEST BRUSSELS SPROUTS SOUP RECIPE
Ingredients:
- 450 g/15¾ oz frozen brussels sprouts
- 100 g/3½ oz smoked bacon
- 300 g/10½ oz sausage
- 4 medium potatoes
- 2 onions
- 1 clove of garlic
- 3 tbsp oil
- 3 tbsp tomato concentrate
- ½ leek
- 500 ml/17 fl oz vegetable stock
- 2 tbsp chopped fresh parsley
- ½ tsp dried thyme
- ½ tsp dried tarragon
- 1 tsp sweet pepper
- salt
- black pepper
Method:
- Peel onion and garlic, then chop them both finely. Wash all vegetables. Cut the leek into half slices. Peel and cube potatoes, slice the bacon.
- Fry the bacon over heated up dry pan (If there’s not enough fat on bacon itself add a little oil), add onion, garlic and leek when it starts to brown, then stir-fry everything for around 3 minutes.
- Move cooked bacon into a pot, pour the stock over it and bring it to boil. Then, add frozen brussels sprouts and potatoes. Cook for around 20 minutes.
- Slice sausages and put them into the soup. Mix the tomato concentrate with ¼ cup water and add it to the rest, then bring the soup to boil.
- By the end of cooking add all spices, as well as salt and pepper for taste. Serve sprinkled with fresh parsley.
