WHITE CABBAGE AND CORN SALAD RECIPE – perfect for grilled dishes or as a side for dinner. Light and healthy 🙂

WHITE CABBAGE AND CORN SALAD RECIPE


Ingredients:

  • ½ head of white cabbage, around 500 g/17 oz
  • can of sweetcorn
  • 1 red pepper
  • 1 onion
  • ½ bunch of dill
  • salt
Dressing:
  • 2 tbsp mayonnaise
  • 4 tbsp natural yoghurt
  • juice squeezed from ½ lemon
  • salt
  • black pepper


Method:

  1. Wash, dry and finely slice cabbage, move it to a bowl, add some salt then squeeze with your hand a few minutes until it softens. Set the bowl aside for 20 minutes.
  2. Clean remaining vegetables. Remove seeds from red pepper and chop it, peel and dice the onion, finely chop the dill and drain the sweetcorn.
  3. Take a large bowl and put all previously prepared ingredients inside it, then toss it. Prepare the dressing in a separate bowl: Pour mayonnaise, yoghurt and lemon juice inside, season with salt and pepper for taste then mix well.
  4. Add the dressing to the salad and toss again well. Add more salt or pepper if needed, then put the salad away in the fridge for at least an hour before serving for the flavors to merge.
