HOMEMADE BAKED VEGETABLES RECIPE – This dish can satisfy even the most hardened meat lovers. It will fill you up with intense flavor, enhanced by a delicious homemade sauce 🙂



  • 4 carrots
  • ½ leek
  • ½ zucchini
  • 2 red peppers
  • 2 cloves of garlic
  • 6 tbsp butter
  • 2 tbsp olive oil
  • 4 tbsp light soy sauce
  • 1 tsp garam masala
  • 1 tbsp cumin
  • 2 oil preserved dried tomatoes
  • 1 tsp freshly ground black pepper
  • 1 chili pepper

  1. Wash all vegetables throughly. Preheat the oven to 200°C/390°F.
  2. Peel the carrots and place them in a baking pan or dish. Cut the leek into 1-2 cm/½-1 in pieces and slice the zucchini, add them to the dish. Remove the seeds and stalk from peppers, cut into smaller pieces and put it with the rest.
  3. Finely chop chili pepper, garlic and dried tomatoes, then sprinkle vegetables with them. Pour olive oil and soy sauce over everything and add butter into the dish, then season with remaining spices: garam masala, cumin and black pepper.
  4. Bake until the vegetables go soft, check from time to time if they’re ready.
  5. In the meantime prepare the sauce. Blend together all ingredients: mushrooms, mustard, mayonnaise, olives, parsley and yoghurt.
  6. Vegetables can be served both hot or cold, with the aromatic sauce.
