GREEK YOGHURT CHEESECAKE – BEST RECIPE
Ingredients:
- 4 x 400g/14 oz greek yoghurt
- 8 eggs
- 400 g/2 cups sugar
- 2 tbsp vanilla sugar
- 3 x 1½ oz vanilla or cream instant pudding
- 250 ml/1 cup oil
- 200 g/7 oz tea biscuits
- powdered sugar, for dusting
Method:
- Preheat the oven to 180°C/360°F.
- Separate egg yolks from whites. Take a large bowl and put yolks inside. Add 1 cup of sugar, vanilla sugar and whisk it well until everything merges. Next, add yoghurt, oil and instant pudding, then mix everything on low speed.
- Beat the whites and add remaining sugar to them. Mix well and pour it into yoghurt mixture, then stir again, this time with a spatula.
- Grease and line a 22×32 cm/8×12 in baking pan with parchment paper. Line the bottom with tea biscuits, then pour the yoghurt mixture over them.
- Bake for around 1 hour. After baking leave to cool down in the oven with the doors tilted. Dust with powdered sugar before serving.
