GREEK YOGHURT CHEESECAKE – BEST RECIPE – There are many types of cheesecakes but this one, based on greek yoghurt, is certainly one of the best 🙂

GREEK YOGHURT CHEESECAKE – BEST RECIPE

Ingredients:

  • 4 x 400g/14 oz greek yoghurt
  • 8 eggs
  • 400 g/2 cups sugar
  • 2 tbsp vanilla sugar
  • 3 x 1½ oz vanilla or cream instant pudding
  • 250 ml/1 cup oil
  • 200 g/7 oz tea biscuits
  • powdered sugar, for dusting

Method:

  1. Preheat the oven to 180°C/360°F.
  2. Separate egg yolks from whites. Take a large bowl and put yolks inside. Add 1 cup of sugar, vanilla sugar and whisk it well until everything merges. Next, add yoghurt, oil and instant pudding, then mix everything on low speed.
  3. Beat the whites and add remaining sugar to them. Mix well and pour it into yoghurt mixture, then stir again, this time with a spatula.
  4. Grease and line a 22×32 cm/8×12 in baking pan with parchment paper. Line the bottom with tea biscuits, then pour the yoghurt mixture over them.
  5. Bake for around 1 hour. After baking leave to cool down in the oven with the doors tilted. Dust with powdered sugar before serving.
