SIMPLE ASPARAGUS FRITTATA RECIPE – a delicious dish with asparagus that doesn’t require much work nor many ingredients. A great choice for an afternoon meal 🙂



  • bunch of green asparagus
  • 2 tbsp oil, plus extra for greasing
  • 5 eggs
  • 50 ml/1¾ fl oz whipping cream
  • 50 g/1¾ oz gorgonzola cheese
  • salt
  • black pepper
  • powdered chili pepper


  1. Preheat the oven to 200°C/390°F.
  2. Wash asparagus and get rid of hard ends, peel the stalks. Cut them into smaller pieces, leaving the piece with head the longest, as close to the width of your baking dish.
  3. Heat up oil on a pan over medium heat. Cook the asparagus under a lid for 5-6 minutes until they go soft, stirring often.
  4. Take a large bowl and put eggs inside. Add cream and whisk well, then put inside chopped cheese and asparagus (except the pieces with asparagus heads). Season with salt and black pepper for taste then mix everything well.
  5. Grease a 20×12 cm/8×4¾ in baking dish with oil. Pour the batter inside (should fill ⅔ of the dish). Place the remaining asparagus pieces on top and season everything with salt, pepper and chili for taste.
  6. Bake for 20-25 minutes. Serve right after baking.
