JUICY CHICKEN ROLLS WITH SPINACH RECIPE – A recipe for a whole meal: tasty chicken rolls with dill rice and a colorful salad on the side. Healthy and filling 🙂
JUICY CHICKEN ROLLS WITH SPINACH RECIPE
Ingredients:
- 4 skinless chicken breast
- 200 g/7 oz fresh spinach
- 2-3 cloves of garlic, pressed
- 1 tbsp butter
- salt
- black pepper
- ⅓ tsp powdered nutmeg
- 8 slices cheese (like gouda or cheddar)

Dill rice:
- 200 g/7 oz rice
- 2 tbsp butter
- ½ bunch of dill
- salt
- black pepper
Salad:
- 4 tomatoes
- 1 onion
- ½ bunch of chive
- salt
- black pepper
- 4 tbsp oil or olive oil
- 1 tsp wine vinegar
Method:
- Remove the spinach stalks, leaving only leaves. Heat up 1 tbsp of butter over medium heat and put the spinach on the pan. Season with salt and black pepper for taste, then nutmeg and pressed garlic. Simmer everything for around 3 minutes.
- Wash and dry the chicken. Cut each breast along the middle, almost halving them but leaving just enough so that you can unfold the meat like a book. Lightly mallet each steak.
- Season the chicken with salt and pepper for taste. Lay down 2 slices of cheese on each piece, then follow with 1-2 tbsp of cooked spinach, roll and stick together with a toothpick.
- Heat up oil over medium heat and fry the rolls on each side until they turn golden, then put a lid on the pan and cook the meat around 3-4 minutes.
- Cook the rice in accordance to producers instructions. Move it to a bowl, add butter and finely chopped dill, season with salt and pepper for taste, then mix well.
- Wash tomatoes and slice them. Peel and slice the onion. Finely chop the chive. Put those ingredients into a bowl, add olive oil and vinegar, season with salt and pepper, then toss the salad well. The meal is ready to be served.
