TRADITIONAL KOPYTKA RECIPE – Kopytka are a traditional Polish dish based on potatoes, similar to Italian gnocchi. Some variations, like the one described below, contain some additional ingredients and so they can be used as both main dish or a side 🙂

TRADITIONAL KOPYTKA RECIPE


Ingredients:

  • 1 kg/35¼ oz potatoes
  • 500 g/17½ oz cottage cheese
  • 1 onion
  • salt
  • black pepper
  • 125 g/1 cup wheat flour, plus extra for dusting
  • 2 tbsp potato starch
  • oil


Method:

  1. Wash, peel and boil potatoes in salted water, then mash them and leave to cool down. Peel, dice and cook the onion over some oil or other grease.
  2. Move the potatoes into a large bowl. Add cheese and cooked onion, then season with salt and pepper for taste. Pour the flour and potato starch, then knead everything until you get a merged mass.
  3. On a flat surface dusted with flour, shape the dough into a long roll, then squish it from the top a little. Slice the flatten roll every 2-3 cm/1 in to get individual kopytka.
  4. Boil 2 l/68 oz of water and add salt to it. Throw kopytka inside and cook until they emerge from water and a minute more
