CAULIFLOWER MEATBALLS IN TOMATO SAUCE RECIPE – delicious, meatless dinner that can be prepared quickly and easily 🙂

CAULIFLOWER MEATBALLS IN TOMATO SAUCE RECIPE


Ingredients:

  • ½ head of cauliflower
  • 100 g/3½ oz rice
  • 1 onion
  • 2 cloves of garlic
  • ½ bunch of dill
  • 1 egg
  • 3-4 tbsp bread crumbs
  • 500 g/17½ tomato passata
  • salt
  • black pepper
  • oregano
  • basil
  • powdered hot pepper
  • oil


Method:

  1. Cook the rice in accordance to producers instructions. Wash and split the cauliflower into rosaries, then cook it as well in boiled, salted water until it turns soft. Peel the onion and finely chop it, along with garlic.
  2. Heat up some oil over medium heat, then cook the onion until it’s translucent, add garlic and fry for one minute more.
  3. Take a large bowl and put inside rice, cauliflower and cooked onion with garlic. Blend everything into a smooth mass. Add egg and season with salt, black pepper and hot pepper, for taste. Put chopped dill inside and mix everything while gradually adding bread crumbs. Form meatballs from the created mixture.
  4. Heat up oil on a pan over medium heat. Cook meatballs from all sides until they start to brown. At that point pour the tomato passata into the pan, season with basil and oregano for taste, then cook for few more minutes while stirring from time to time.
