SIMPLE STRAWBERRY CAKE RECIPE – Simple, moist cake with strawberries that doesn’t require a mixer, topped with butter crumbs 🙂 Super easy and super tasty 🙂
SIMPLE STRAWBERRY CAKE RECIPE
Ingredients:
- 310 g/2½ cup flour
- 4 tbsp coconut flakes
- 4 eggs
- 200 g/1 cup sugar
- 250 ml/1 cup kefir
- 250 ml/1 cup oil
- 2 tsp baking powder
- 400 g/14 oz strawberries
Butter crumbs:
- 60 g/½ cup flour
- 50 g/1¾ oz butter
- 1½ tbsp powdered sugar
Method:
- Make sure all ingredients are in room temperature. Preheat the oven to 180°C/360°F.
- Pour the flour into a large mixing bowl. Add sugar, coconut flakes and baking powder, then mix well.
- In a separate bowl whisk together eggs with kefir and oil. Pour the liquid ingredients over the dry ones and mix everything using a spoon.
- Grease and line a 20×30 cm/8×12 in baking pan with parchment paper and pour the batter in it. Remove the seeds from strawberries, cut them in half and lay down over the surface of cake.
- Prepare the butter crumbs by mixing together flour, butter and powdered sugar with your hand until you get the characteristic crumbs. Sprinkle them on top of cake.
- Bake for 45-50 minutes. Cool down on a wire rack. Coconut flakes can be replaced with additional 3 tbsp of flour.
