TRADITIONAL BOGRACZ STEW RECIPE – A hearty meal similar to goulash and popular in Europe. A combination of meat, vegetables and plenty of spices 🙂



  • 1 kg/35¼ oz beef neck
  • 2 onions
  • 2 red peppers
  • 4 potatoes
  • 1 carrot
  • can of skinless, sliced tomatoes, drained
  • 2 tbsp powdered sweet pepper
  • 1 tsp powdered hot pepper
  • ½ tsp chilli pepper
  • 1 tsp cumin
  • 2 tbsp oil
  • salt
  • black pepper
  • bunch of parsley, for serving
  • thick cream, for serving
  • pasta


  1. Wash, dry and cube the meat. Peel and finely dice the onions. Wash all vegetables. Peel and slice the carrot. Remove the seeds from red peppers, then finely dice them. Peel and and cube potatoes.
  2. Take a deep pan or a pot and heat up the oil inside. Put the meat in and cook over medium heat. Season the meat with powdered peppers. After few minutes add onion, cook for few minutes more while stirring, then add carrot and red pepper as well. Finally, put the drained tomatoes and pour hot water over everything and simmer.
  3. When the meat starts getting soft add potatoes. Simmer everything until vegetables get soft, then add all remaining spices: chilli pepper, cumin, salt and black pepper. Cook for few more minutes, stirring from time to time.
  4. Cook pasta separately and add it to the pot. Serve bogracz with freshly chopped parsley and cream on top.
