GREEN PEAS PIEROGI RECIPE – Healthy pierogi that are sure to amaze everyone with their flavor 🙂 If you want to make them even more green, you can sprinkle them with fresh coriander 🙂


Ingredients (for 30 pierogi):

  • 190 g/1½ cup wheat flour, plus extra for dusting
  • 125 ml/½ cup hot water
  • 3 tbsp oil
  • ½ tsp salt
  • 2 shallot onions
  • 450 g/16 oz green peas (frozen)
  • 2 tbsp oil
  • 2 tbsp freshly chopped mint
  • salt
  • black pepper


  1. Put the flour, oil and salt into a large bowl. Start kneading and gradually add warm water while doing so. Continue until you get a smooth and elastic dough. Wrap and set aside for the making of stuffing.
  2. Peel and finely chop the shallots. Warm up the oil on a pan and cook the onion until it starts turning golden. Boil the peas in salted water until they soften, then drain and cool them.
  3. Blend the peas into a smooth mass, add onions (along with oil on which they were fried) and chopped mint. Season with salt and pepper for taste and mix throughly.
  4. Roll the dough on flat surface dusted with flour. Take a glass or small round form to cut out base for pierogi. Lay down some stuffing on the cut out, not too much to make sure the dough won’t rip when wrapping. Carefully fold the dumpling and press with fingers along the edge to stick them together. Repeat for the rest.
  5. Boil some water with 1 tsp of salt and 1 tbsp oil. Put the pierogis in the water and cook for 3 minutes from the moment they emerge on the surface.
