HOMEMADE SAVORY TART RECIPE
Ingredients:
Pastry:
- 250 g/2 cups flour
- 100 g/3½ oz butter or margarine, plus extra for greasing
- 2 egg yolks
- ½ tsp salt
- bread crumbs, for lining
Filling:
- 100 g/3½ oz blue cheese
- 6 slices dry smoked sausage, diced
- 4 medium mushrooms, sliced
- 500 g/17½ oz asparagus
- 1 tsp sugar
- 50 ml/¼ cup milk
- 100 g/3½ oz grated gouda
- few rosaries of broccoli
- 2 eggs
- 250 ml/1 cup sour cream
- marjoram
- salt
- black pepper
- powdered or grated nutmeg
- cherry tomatoes
Method:
- Preheat the oven to 180°C/360°F.
- Prepare the pastry first: In a large bowl put flour, butter, salt and egg yolks, then knead into a smooth dough. Wrap it in plastic food foil and put aside in the fridge for 30 minutes.
- Grease and line a 28 cm/11 in tart pan with bread crumbs. When pastry is ready, roll it so that it fills the surface of the pan, covering the sides as well. Bake for around 15 minutes.
- Heat up water in a large pot and peel the asparagus. When the water is boiling, add sugar and milk, then put in asparagus. Cook for 5 minutes, take them out and roughly cut when they cool down.
- When the pastry is ready lay down the sausage, mushroom slices and smaller pieces of asparagus (leave the bigger ones for later).
- Take a bowl and put cream inside, then add grated gouda and eggs. Season with salt, pepper, marjoram and nutmeg for taste and beat well. Pour the mixture over the tart.
- Place broccoli rosaries, remaining asparagus and cherry tomatoes cut in quarters and crumble the blue cheese over your tart. Bake for another 25 minutes (same temperature).
