POLISH WZ CAKE – TRADITIONAL RECIPE – “Wuzetka” is a Polish chocolate cream pie. Its name derives from the cake shop location from which it originated, Warsaw W-Z Route. The cake is made of chocolate sponge with cream layer in between.
POLISH WZ CAKE – TRADITIONAL RECIPE
Ingredients:
- 4 eggs
- 200 g/1 cup sugar
- 180 g/6½ oz wheat flour
- 2 tbsp cocoa
- 1 tsp baking powder
- 4 tbsp cold water
- pinch of salt
- small jar of fruit jam
- 200 g/7 oz milk chocolate
- 70 ml/¼ cup milk
- 50 ml/1½ fl oz rectified spirit
Cream:
- 1 l/34 fl oz whipping cream
- 10 tbsp powdered sugar
- 4 tsp gelatine
Method:
- Preheat the oven to 170°C/340°F. Grease and line a 22×32 cm/9×13 in with parchment paper.
- Take a medium bowl and put flour inside. Add cocoa and baking powder, then mix well and set the bowl aside
- Separate the egg whites from yolks. In a large mixing bowl whisk the egg whites with a pinch of salt, until they become soft and foam-like. Keep beating while gradually adding sugar and water. Lower the mixer speed and put the yolks into the bowl, then add the flour mixture one spoon at a time. Keep mixing until all ingredients merge well.
- Pour the mixture into the baking pan and bake for 25 minutes, cool on wire rack and cut into two layers.
While the chocolate sponge bakes and cools down, prepare the cream. Melt the gelatine in ½ cup hot water then cool it down. Whip the cream, add powdered sugar by the end. Put aside around 8 tbsp. of whipped cream for serving, keep it in the fridge. Pour the cool but still liquid galatine to remaining cream and mix well.
- Take one layer of chocolate sponge and soak it with alcohol, then spread a thin layer of jam over it. Pour the cream evenly on the base, then put the other chocolate half on top and press gently. Even out the edges.
- Boil the milk in a pot, turn off the heat and add chocolate in chunks. Mix well energetically. Cool it down a little and pour the icing over the cake, spreading it even.
- Put the cake in fridge for at least 2 hours before serving. Serve decorated with whipped cream.
