QUICK NO-CRUST CHEESECAKE RECIPE
- 1 kg/35 oz soft cheese
- 175 g/¾ cup sugar
- 2 tbsp potato starch
- 4 large eggs
- 2 tsp vanilla paste
- 300 g/10½ light cream
- 2 tbsp powdered sugar
- 2 tsp lemon extract
- Preheat the oven to 180°C/360°F.
- Take a large bowl and put cheese inside. Add sugar, potato starch, eggs and vanilla paste, then mix it well.
- Grease and line a 24 cm/10 in springform pan with parchment paper. Pour the cheese mix inside and bake for 10 minutes, then lower the temperature to 120°C/250°F and bake for 60 more minutes (the centre should be spongy). Put the cake aside until it completely cools down.
- Prepare the coating in the meantime: In a mixing bowl put together cream, powdered sugar and lemon extract, then whisk well. Pour the mixture over the cooled down base and leave it in the fridge for the night.
