SPRING SOUP – HEALTHY RECIPE
Ingredients:
- 1 carrot
- 3 cucumbers
- 4-5 potatoes
- 3 radishes
- 2 green onions with leaves
- ½ bunch of dill
- 1½ l/51 fl oz vegetable stock
- 1 tbsp butter
- salt
- black pepper
Method:
- Remember to wash all your vegetables throughly. Peel the carrot and potatoes. Dice potatoes and cut the carrot into half slices.
- Take a large pot and pour the stock inside. Bring it to boil, then add potatoes and carrots. Cook for around 10 minutes.
- Add cucumbers and radish into the soup. Finely chop the dill and onion (with leaves), then add them to the pot along with the butter. Season with salt and pepper for taste and stir. Cook for around 3 more minutes.
