BEST MUSHROOM SALAD RECIPE – A perfect salad for any banquet or meetings, as well as barbecue parties. It’s a favourite in my house 🙂
BEST MUSHROOM SALAD RECIPE
- 5 hard boiled eggs
- 2 pickles
- 300 g/10½ oz mushrooms
- ½ bunch of dill
- small can of sweetcorn
- 1 leek
- 3 tbsp natural yoghurt
- 3 tbsp mayonnaise
- 1-2 tsp mustard
- black pepper
- Chop the leek and dill. Dice the mushrooms, pickles and eggs finely. Drain the sweetcorn
- Heat up ½ tbsp oil on a large pan over medium heat. Put the mushrooms and leek on the pan, season with salt and pepper for taste, then cook until all the water evaporates.
- Take a large bowl and place inside: eggs, pickles, sweetcorn, cooked mushrooms with leek, and dill.
- In a separate, small bowl make the dressing. Pour the yoghurt and mayonnaise inside, add mustard, season with salt and pepper for taste, then mix well.
- Pour the dressing over the salad and toss well. Salad is ready for serving right away.
