TRADITIONAL STUFFED EGGSHELLS RECIPE – a traditional dish that is present on my Easter table every year, a hot variation of deviled eggs

TRADITIONAL STUFFED EGGSHELLS RECIPE


Ingredients:

  • 10 hard boiled eggs
  • 500 g/17½ oz mushroom
  • 2 onions
  • 1 bunch of parsley
  • salt
  • black pepper
  • bread crumbs
  • butter, for frying


Method:

  1. Hard boil the eggs and cool them down. Cut in the middle vertically along with the shell, then scoop out the egg. Shred the mushrooms finely and dice the onion.
  2. Cook the onion on 1 tbsp. butter over low heat until it’s soft and translucent, then add the mushrooms and cook for 5-7 minutes tossing often.
  3. Take a large bowl. Shred or press the eggs and put them inside. Add fried onion with mushrooms and finely chopped parsley. Season with salt and pepper for taste them mix well until everything merges together.
  4. Fill the eggshells back with the stuffing. Cover the bottom of every shell with bread crumbs.
  5. Cook the eggs on a pan, face down, until the bottom turns golden. Eggs can be served hot but they are also good when cooled down
