AVOCADO SALAD – HEALTHY RECIPE
Ingredients:
- 2 medium sized cucumbers
- 1 avocado
- 50 g/2 oz spinach
- ½ bunch of parsley
- 3 tbsp pumpkin seeds
- juice from ½ lemon
- 6 tbsp pumpkin seeds oil or olive oil
- feta cheese
- salt
- black pepper
Method:
- Wash and dry all the vegetables. Cut the cucumbers into halves then slice them. Peel the avocado and take the seed out, slice the rest finely. Chop the parsley finely.
- Heat up a pan and fry the pumpkin seeds on it until they start turning golden. Set them aside to cool down.
- Take a large platter and line it with spinach leaves. Put a layer of cucumber and avocado slices, then sprinkle with pumpkin seeds.
- Spread some parsley on top of the salad and drip the lemon juice around. Dice the feta cheese and add it to the rest.
- Finally, pour the oil around the plate, then season with salt and pepper for taste. Salad is ready to be served right away.
