LOADED POTATO STICKS – EASY RECIPE – Mashed potato filled with extras, then breaded and fried. It’s an all in one side for any dish, or can even be the main course, it’s so filling!

LOADED POTATO STICKS – EASY RECIPE


Ingredients:

  • 1½ kg/53 oz potatoes
  • 2 onions
  • 500 g/17 oz raw or smoked bacon piece
  • 125-250 g/1-2 cups flour
  • 3 eggs
  • bread crumbs
  • salt
  • black pepper
  • marjoram
  • oil, for frying


Method:

  1. Peel and boil the potatoes in salted water. When they’re done, mash the potatoes well in a large bowl (you can also use leftover mashed potatoes from the day before if you have some)
  2. Dice the bacon and onion finely. Take a pan and put it on a medium heat, pour some oil on the pan. Cook the onion and bacon, then add it to the potatoes and mix well. Put aside to cool down
  3. Next, pour the flour into the bowl and mix again. Season with salt, pepper and marjoram for taste.
  4. Cut or tear away a piece of dough and form it into a roll approximately 3 cm/1 in thick. Then, cut the roll into 5 cm/2 in slices. Repeat until you use up all the dough
  5. Whisk the eggs in a bowl and prepare another one with bread crumbs. Cover each piece in egg then roll it in bread crumbs
  6. Fry on hot oil from each side until they turn golden. Serve with dressings or cream, as a side or main dish
