VIENNESE CHEESECAKE RECIPE – This version of cheesecake is probably the most popular one in Poland. It’s a baked cake with no base, it’s soft and refined. Normally you can add extra ingredients to it like raisins or orange skin but I prefer it in its purest form. Tasty, tested recipe 🙂

VIENNESE CHEESECAKE RECIPE


Ingredients:

  • 1 kg/35 oz curd cheese minced thrice
  • 6 eggs
  • 200 g/1 cup sugar
  • 125 g/4½ oz butter, plus extra for greasing
  • 1 tbsp potato starch
  • 2 tbsp wheat flour
  • 2 tsp vanilla sugar or extract
  • bread crumbs, for lining
  • powdered sugar, for dusting


Method:

  1. Grease a 25 cm/10 in springform cake pan with butter and line it with thin layer of bread crumbs. Preheat the oven to 180°C/360°F
  2. Separate the yolks from the whites. In a large bowl mix together egg yolks, both sugar and vanilla sugar, then butter.
  3. Next, add the soft cheese gradually while constantly mixing, then add the flour into the bowl and mix well again.
  4. In a separate bowl whisk the egg whites with a pinch of salt well, then add it to the rest. Stir well with a spatula. Pour everything into the pan and spread evenly
  5. Bake for around an hour. When it’s done leave the over door open slightly for it cool down, cover it with a thin layer of icing sugar before serving
